Try Something New: You might pleasantly surprise yourself!

My friend, Ann recently introduced me to a breakfast treat, “Superhero Muffins.” The name alone can put a smile on your face. Packed with veggies and smelling of delicious cinnamon, nutmeg, and maple syrup, they are a nourishing start to the day.

 I'm not a purist, yet I seek ways to be mindful of what I put in my body. I used almond meal and whole-grain oats in place of nutrient-stripped white flour. Being in a playful mood, I added my own special favorites: goji berries, raisins, and some Belgium semisweet chips to the mix. (Goji berries have been used for centuries in traditional medicine for their capacity to boost longevity and vitality.)  

I baked the muffins after leading a Qi Gong morning hike in beautiful Palmer Park with some wonderful people and a dog named Zen. The combination made for a lovely day!
